Summary:

The cantaloupe and strawberries in this mocktail are folate-rich, good for mothers-to-be.

For best results, make sure the fruit and mineral water are well chilled.

1 serving

Ingredients:

  • 1/2 cup cantaloupe chunks (3 ounces total)
  • 3 medium organic strawberries (3 ounces total)
  • 1/2 ounce freshly squeezed lime juice
  • 1 ounce simple syrup (see NOTE)
  • 1 cup crushed ice
  • 1/4 About 2 ounces chilled lime-flavored sparkling soda water

Directions:

Puree the cantaloupe in a blender or food processor until smooth. Pour into a medium-to-large wine glass. (If there is more than 3 ounces, reserve for another use.)

Hull 2 of the strawberries, then cut the fruit into thin slices and add along with the lime juice and simple syrup. Add the crushed ice and stir gently, then top off with the sparkling water.

Garnish with the remaining strawberry, speared on a toothpick.

NOTE: To make simple syrup, combine 1 cup sugar and 1 cup water in a small saucepan over medium heat, stirring until the sugar dissolves. Bring to a slow, rolling boil, then reduce the heat to medium-low and cook for 5 minutes. Transfer to a glass container and let cool to room temperature. Cover tightly and refrigerate until chilled through; store indefinitely.
