Cranberry Squash 1.5 # raw winter squash, halved 1/2 c raw fresh cranberries 1 apple, chopped into 3/4" pieces 1/4 c chopped raisins juice and zested peel of 1 orange 1.5 T honey 1 T butter dash of salt Mix stuff, place in squash cavity, bake until tender ========= Golden Soup 6 c water 2 vegetable boullion cubes 1 c red lentils 1.5 c diced onion 2 cloves garlic 1/2 t turmeric 1 bay leaf 1 c diced celery 1.5 c diced carrot 1 c diced potato 1.5 c diced zucchini 1/4 - 1/2 c minced parsely 1/4 - 1/2 c nutritional yeast 1 T olive oil Boil water, add boullion. Wash the lentils in several changes of water until they stop foaming. Add to the pot. Add onion, garlic, turmeric, bay leaf. Simmer 25 minutes. Add celery, carrot, potato; simmer 10 minutes more, then add zucchini and simmer another 10 minutes. Add parsley and whisk in yeast and olive oil. Salt and pepper to taste. Serve hot.
