Oatmeal Bars

Oatmeal is best for those who are looking to lose fat and stay healthy. Oats are very low in fat and excellent source of fiber. The water soluble fiber in oats help to lower blood cholestrol levels.

When Nandita (Saffron Trail) announced the next WBB theme, I was planning to make something with oatmeal and found a good recipe HERE. I don’t really hate oatmeal, but I don’t love them either and for those who hate oatmeal these kind of bars with raisins, nuts or fruits are the best. These are soft, chewy and not the crunchy types. They make a healthy filling breakfast or snack.

Oatmeal Breakfast Bars

Ingredients ( Serves : 8 )

  • Old fashioned uncooked oats - 2 3/4 cups
  • Brown Sugar (Firmly packed) - 2/3 cups
  • Raisins - 1/2 cup
  • Walnuts - 1/2 cup (roughly chopped)
  • Ground Cinnamon - 1 tsp
  • Vanilla extract - 2 tsp
  • Eggs - 2, lightly beaten
  • Salt - a pinch
  • Milk - 3 cups + 2 tbsp
  • Vegetable oil - 1 tbsp

Method:

Preheat oven to 360°F . Grease a 13 by 9inch baking pan with little oil.
Add sugar, raisins, chopped nuts, ground cinnamon and a pinch of salt in a large bowl, mix well.
In another bowl, add vanilla, milk, eggs and mix well. Add this to the dry ingredients and mix well until they are blended.
Pour this mixture to a baking dish and spread evenly using a spatula.
Bake for 45 to 55 minutes or until golden brown and center is firm. Let it cool for 8 minutes and cut them to bars.
Serve warm.
* Wrap the the leftover bars individually and refrigerate.

I just love the Fruit & Nut trail mix from Nature valley !! Will surely love making them at home. Can I skip the eggs in the recipe ??

 

Frankly this is no way near nature valley, these are soft not the crunchy typss ! Yes you could skip the eggs .

Hi,

This is Kala again. I am getting few guests at home during the coming long weekend. Since they are all tamil, i want to make S Indian stuffs only. Yesterday, i got urad dal, but it is split urad dal. I usually use the whole urad dal. So I am not sure of the proportion for Idli and dosa using this split urad dal. Can you please help me?

Since I want to prepare good food for them, any tips and suggestions will be greatly appreciated.

Moreover, out of the two families I am getting, one is pure veg and the other prefers Non Veg, what should I do? Since I myself have two small kids, cooking taking care of individual needs is going to be tedious for me, I think. What should I do? Please advice…………

Kala I have never used split urad for idlies, but here is one amazing recipe for super soft idlies with split urad dal- http://trythisrecipe.blogspot.com/2006/11/soft-idlis.html. the recipe has poha (aval), If u dont have that u can use 1 to 2 tbsp of lefotver cooked rice.

 I wud suggest - Veg Biriyani  for both veg and people who eat non-veg and sides make any Kurma with ur choice of veggies, for non-veg you can make some chicken curry and store-bought or homemade chapathies. For chicken recipes check this blog  - http://malluspice.blogspot.com/

I just love the DOF in this shot. Nicely composed. The oatmeal bars are great. When I make them for my little one, Soeren I like adding dried cranberries too. Dates and figs make a great alternative too.

great sounding recipe - i like there is no flour involved, it’s pure oatey goodness this way! i’ll be making them this weekend.

any idea how long these would last in the fridge? i’d hope they’d last at least 2 weeks…
