An idea worth refining, I think
An idea worth refining, I think
Came up with this one all by myself: take a piece of salmon. Paint it with a little cider/mustard reduction. Cover the whole thing with paper-thin apple slices (a mandoline or a very steady hand works best, here). Paint them with a little melted butter. Bake. Finish under a broiler to attempt to attractively brown the apples. Fail, utterly, at browning them. Realize that the apples really need to be as thin as possible for the dish to have a hope of succeeding. Enjoy despite the shortcomings and consider options for the next attempt.
